Protein pancakes with blueberries and honey

Maximise your protein intake with this quick and easy pancake recipe. A great post-workout breakfast!

Ingredients

1 banana

50g porridge oats

25g protein powder

100ml of a milk of your choice

1 large egg

1tsp cinnamon

¼ tsp baking powder

1 tsp low calorie cooking spray

Blueberries and honey to garnish

Method

 In a blender, blitz oats, protein powder, baking powder, eggs, milk, banana and cinnamon for 1-2 minutes until a smooth batter is formed.

On a medium heat, add low calorie spray to a non-stick pan. Pour in one ladle of the mixture, and cook for 1-2 minutes until small bubbles form on the surface. Flip the pancake, cooking for a further 2 minutes until golden brown. 

Repeat with the remaining batter. Stack pancakes, and serve with your favourite topping.
