Fried egg, avocado, cherry tomatoes and smoked salmon

Slice the avocado into thick pieces, chop the cherry tomatoes, and arrange on a plate with a small handful of smoked salmon.
In a non-stick frying pan, add the olive oil and heat for 1-2 minutes. When the oil is sizzling, add egg and fry to your liking.
For a runny yolk - crack the egg into a pan, cover with a tight-fitting lid and cook for 3 minutes over a low heat. When the white is set, add to plate.
For a medium yolk - cook the egg for 5 minutes over a low heat. When the white and yolk is set, add to plate.
To garnish, squeeze over lemon and add salt and pepper to taste.
