Chicken breast with thyme, lemon & garlic

If you like to stay ahead of your meal prepping, this Chicken recipe is simple, fast, and very tasty

Ingredients

4x 180g chicken breasts

2 tbsp olive oil

2x lemons

1 garlic bulb

3x sprigs of thyme

pinch of salt & pepper to taste

Method

Preheat the oven to 180C.

Rub each chicken breast with olive oil, salt & pepper. Set aside to marinade. 

Meanwhile, chop one lemon into slices. Place on a baking tray, adding the marinaded chicken breasts on top. 

For the garlic - scatter the cloves on the tray, leaving the skin on. Sprinkle over thyme and juice of the other lemon.

Roast the chicken breast for 20-25 until cooked through, and juices run clear. 

Simply rest for 5 minutes, and enjoy!

*Tip - use the leftover roasted garlic as a spread with crusty bread, or add to soups for flavour!

 WHY NOT ADD A LITTLE SPICE?

Alternatively, you can coat the chicken breasts in a cajun spice mix. This spicy version can be done using the same cooking method, substituting the thyme with coriander. 

For the cajun spice mix, combine paprika, cayenne pepper, oregano, garlic powder, onion powder, olive oil, salt & pepper in a bowl. Massage each chicken breast with the mix!
