Baked sweet potatoes with kale and feta

Pre-heat the oven to 220C. Prick the sweet potatoes all over with a fork and place on a baking tray lined with foil, and cook for 45-50 minutes. Cook the kale in a pan with 55ml of water until wilted and season with salt and pepper and set aside. Once the potatoes are cooked remove from oven and allow to cool for 10 mins.  In a large bowl crumble 2/3 the feta and add the olive oil and kale. Next, cut the sweet potatoes down the middle and add the flesh to the bowl, mix all together and season with salt and pepper. Add the meat back into the jackets and crumble the remaining feta, serve and enjoy!
