Baked sweet potatoes with kale and feta

This delicious sweet potato dish can be served as a light lunch or easy side!

Method

Pre-heat the oven to 220C.

Prick sweet potatoes with a fork, placing on a baking tray lined with foil. Cook for 45-50 minutes until soft on the inside, crispy on the out. 

Meanwhile, add 55ml of salted water to a pan. Add the kale, cooking until soft and wilted. In a large bowl crumble 2/3 the feta, adding a drizzle of olive oil and the kale.

Once the potatoes are cooked, remove from the oven and allow to cool for 10 mins. 

Once cooled, cut the sweet potatoes down the middle and add the flesh to the bowl of feta and kale. Mix all the ingredients together and season to taste.

Add the flesh back into the jackets and crumble over the remaining feta.
